pizza in my pocket

When hubby and I were first married, I searched all over for a really great pizza crust recipe. We must have tried (with no complaints from him) 20 different pizza crust recipes over the past almost 10 years. We have selected and tweaked a yummy, healthy, and versatile pizza crust recipe that I'm sure originally came from Taste of Home magazine.


I (and now with my kiddo kitchen helpers who run when they heard the word dough) use this recipe to make pizza crust, bread sticks, stuffed bread sticks, calzones, and pizza in my pockets. We call these little stuffed pockets 'pizza in my pockets' because once when Bee was a little bit younger and I said that we were having pizza pockets for dinner and looked super shocked and asked, "pizza in my pocket?"


Anyway, here it is.


Pizza crust
dissolve:
1 T yeast
1 ½ c warm water
Add:
2 T sugar
½ t salt
@ 2 c flour
1 ½ c whole wheat flour and/or spelt flour
a few T of flax seed meal and wheat germ
Mix, knead- keep it fluffy
rise 1 hour
Shape into whatever you want
Add corn meal- to dust (optional)
425° @10-15 min depending on shape and thickness
-for pizza crust, I bake the empty crust a few minutes before addding the topping and baking again. I always use my baking stone.

we always made our own pizza with whole grain store-bought pizza shells (straight from freezer to toppings to oven) but of couse that is not possible in mexico. We may have to try your recipe!
